Minute Meals for Moms: Chloe’s Carrot Fluff…

For 6 people: 

1lb carrots peeled and chopped (doesn’t have to be small because you’re going to mash them anyway)

1/2 cup butter (softened not hot)

1 teaspoon vanilla (or to taste)

3 eggs

3 tablespoons flour

1 teaspoon baking powder

1/2 teaspoon salt

3/4 cup of sugar

1/2 teaspoon cinnamon 

Pinch of nutmeg

(I usually use a little more sugar and don’t use brown because then you’ll have to use a lot because it’s not as sweet)

Preheat oven 345•

Boil carrots in pot of lightly salted water. Once carrots are soft mash them (I use blender or puree to do it). You want a smooth texture.

Mix all wet ingredients eggs, vanilla,

butter, and carrots.

Mix dry ingredients then add to other carrot mixture.

Bake in buttered pan for 45-1hr.
