Lasagna noodles Marinara Sauce (your favorite kind) 3 cloves garlic Half yellow onion Frozen spinach (thawed) or fresh, I prefer frozen 3 medium Zucchini Mozzarella cheese Medium cheddar cheese Cream cheese Seasoning salt Pepper Italian seasoning Butter (2 tbsp) Olive oil (1 tbsp)
Preheat oven to 350•
Chop onion and garlic. In skillet, heat olive oil and butter. Add onion and garlic until tender. Add in chopped zucchini and spinach. Season with season salt, pepper, and Italian seasoning.
Once veggies are cooked, add cream cheese to veggie mixture.
Boil a pot of salted water. Once water begins to boil add lasagna noodles. Strain noodles from water. Make sure they’re dry but not sticking together.
Now to layer. First in a glass pan 9×12 usually works perfect, add some Mariana sauce to the bottom of pan. Second, place 3-4 noodle on top. Third, add more marinara sauce, then spinach mixture, add cheese (cheddar and mozzarella) followed by more marinara sauce. Repeat this 2 more times. On last layer add top layer of noodles, marinara sauce, and remaining cheese.
Sprinkle some Italian seasoning and parsley on top and let bake for 30 minutes or until top is lightly browned. Let rest for a few minutes before serving. Enjoy!
